This week is all about recreating our summer camp favorites, so it didn't take me long to choose my favorite thing about hanging out around the campfire: the food. More specifically: Pie iron food.

If you've never heard of the magical campfire tool that is a pie iron, prepare to have your mind blown. Think of it as a cross between a cast-iron skillet and a panini press; use it over the coals to create everything from toasty sandwiches to yes, piping hot apple pies.
My family toted our trusty pie iron on every car camping trip. Growing up, we used paper-thin white bread and brick cheese to make oozy campfire grilled sandwiches, and canned pie filling for dessert. But since this is grown-up summer camp, I gave these favorites a twist.
The Basics: Cooking Over the Coals
The most important part of cast-iron cookery? Season the pie iron (or pan) before leaving for your trip, especially if it's been stored in a damp place. Here's a super-easy method.

While a few over-browned spots are part of the charm of campfire cookery, there are a few tricks to getting it right. First off, choose a part of the fire without high flames — you're looking for hot coals. Then, flip often to cool all sides evenly.
Variation 1: Grown-Up Grilled Cheese

For the "fancy grilled cheese," I swapped bread for pizza dough to create a calzone-grilled cheese hybrid. Sharp cheddar cheese (which keeps reasonably well in a cooler for a few days) gets a sweet counterpoint from smoky tomato jam. Gooey, cheesy, delicious.

Variation 2: From-Scratch Apple Pie

Turns out it's super-easy to make your own camp-ready apple pie filling; all it takes is some pre-trip prep work. I pre-sliced the apples and coated them with lemon juice, then mixed up the spice mixture in a separate bag. Surprisingly, white bread holds up flavor-wise as the crust. I just swapped the super-thin bread for a thicker potato variety. The result: Buttery and delicious topped with (Mason jar!) whipped cream.
