The Jewish holiday of Passover, an eight-day celebration of the exodus from slavery in Egypt, occurs each spring, beginning this year before sundown on Monday, April 22. The holiday begins with a seder, a dinner with family and friends, to retell the story of Passover through a special book called a Haggadah. On every table, you'll find matzah, as most Jewish people don't eat anything leavened (like bread) during the holiday to symbolize the swift escape from Egypt. They didn't have enough time to allow their bread to rise, and so they ended up with matzah.

Also on every Passover table, you'll always find a seder plate with various compartments for specific symbolic foods to help tell the story of Passover. Most seder plates have five or six items on the plate including charoset, a mix of apples, nuts, wine and cinnamon, which represents the mortar the slaves used, maror, most often horseradish or another bitter herb, to symbolize the bitterness of slavery (some add a second bitter herb, likely lettuce). Karpas, a green vegetable (often parsley or celery), a shankbone symbolizing the escape from Egypt and a hard-boiled egg for the circle of life are also included.
