Key Lime Pie, In Boozy Float Form
Key lime pie is good. Key lime pie with rum and ice cream that you can sip on the patio? Now, that’s a completely different, delicious story.
- graham cracker crumbs
- 3/4 cup coconut milk ice cream
- 3 ounces coconut rum
- 6 ounces lime soda
- whipped cream
- fresh key lime, for garnish
- shredded coconut, for garnish
Moisten the rim of a large float glass (Tip: For better staying power, use a very thin coat of corn syrup.) Invert the glass and dip the rim in graham cracker crumbs.
Place coconut milk ice cream in the bottom of the glass. Add the rum and then slowly pour the lime soda over the ice cream to fill the glass.
Top with whipped cream and garnish with a fresh key lime wedge. Add a sprinkling of shredded coconut. Serve immediately.
