Bourbon Bacon Ranch Dressing

The Kentucky Derby is one of the most important horse races in the world, but the focus is often on the food instead of the finish line. From the infield to the suites, Derby fans snack on pickled shrimp, toasted pecan halves and many delicious dips, but in New York City, Chop't Creative Salad Company is doing their part to celebrate the best two minutes in sports by featuring the Kentucky Food Truck salad on Derby weekend.
In the spirit of the South, they top a mix of fresh romaine and mesclun lettuces with fried chicken, white cheddar, biscuit crackers, cucumber and pickled jalapenos. Then they dress the salad even better than the ladies in the box seats thanks to a light drizzle of bourbon bacon ranch dressing.

Bourbon Bacon Ranch Dressing
1 ¼ cups mayonnaise
¼ cup sour cream
¼ cup plus 1 tablespoon low fat buttermilk
½ tablespoon red wine vinegar
1 teaspoon fresh lemon juice
1 tablespoon chives, chopped
1 tablespoon scallions, chopped
2 tablespoon bacon, cooked, drained and chopped
½ teaspoon ground black pepper
½ teaspoon granulated garlic
Pinch onion powder
¼ cup Jim Beam Bourbon Hot Sauce
Add all ingredients except chives, scallions and bacon to a blender or food processor. Blend or mix just enough to incorporate the ingredients. Add remaining ingredients and mix for an additional 30-45 seconds. For best results, refrigerate for at least 2 hours before serving.
