Lavender Collins Cocktail Recipe: A Spring Twist on the Tom Collins
Try this beautiful and refreshing party-worthy cocktail made with fresh blackberries and a lavender-infused simple syrup. It's our spring twist on the traditional Collins.

Ingredients
Yield: 1 cocktail
- 1 1/2 ounces gin
- 3/4 ounces fresh lemon juice
- 1/2 ounces lavender and blackberry simple syrup
- 3 ounces club soda
- lavender sprigs, for garnish
For Simple Syrup
- 1 cup water
- 2 cups sugar
- 1 package blackberries
- 3 tablespoons fresh or dried lavender flowers
Make Simple Syrup
In a sauce pan, heat the water and sugar over medium heat (Image 1). Once it hits a boil, quickly reduce heat and let it simmer for 5 minutes, adding the blackberries and lavender flowers (Image 2, 3). Mash up the blackberries so the syrup turns a dark red color.

Strain Syrup
While warm, strain the syrup into a bowl or bottle (Image 1). If strained into a bowl, transfer to a bottle or vessel that’s easy to pour (Image 2). The syrup will last about 10 days in the refrigerator if kept in an airtight container.

Combine Ingredients
With the syrup standing by, you’re ready to combine ingredients and make your cocktail(s). Start by adding the gin (Image 1), lemon juice, club soda and blackberry-lavender simple syrup (Image 2) to a glass.

Add Ice + Garnish
Top with ice (Image 1), then add a few sprigs of fresh lavender (Image 2). Sip and enjoy!
