Cheesy Pie Crust Parmesan Sticks Recipe

Ingredients
- 1 pie crust dough
- flour for rolling
- 1 cup grated parmesan, divided
- 1 egg
- 1 tbs. water
Instructions
Roll pie crust dough in a square about 12" x 12" and just over 1/4" thick on a lightly floured surface. Use flour as needed on the surface and the rolling pin to prevent sticking. Spread 1/2 cup of parmesan overone half of the square. Fold the other half of the dough over the cheese. Roll the dough again slightly to make a rectangle that is 12" x 6" and about 1/2" thick.
Use a pizza wheel or sharp knife to cut the rectangle in half along the long edge creating two 6" x 6" squares. Cut each square into 1/2" strips. Stretch the strips slightly while twisting them and place them on parchment lined baking sheets at least 1"-2" apart. Cover them with cling film and place them in the refrigerator for at least one hour before proceeding.
Preheat oven to 400 degrees Fahrenheit. Place 1/2 cup of grated parmesan in a wide shallow dish or baking pan. Whisk egg and water together in a small bowl until smooth and pale. Use a pastry brush to lightly coat each strip and then roll the strips in parmesan. Return the strips to the parchment lined baking sheets. Bake for 12-15 minutes or until lightly golden brown.
