Vegan Apple Crumble Recipe
This cinnamon-rich apple crumble is ideal for any season (and any reason). Try this delicious twist to the classic fall go-to recipe and include it in your brunch menu to leave your guests in awe.
This apple crumble has the best of both worlds: It’s crispy on the outside and soft on the inside. And you only need one spoonful to convince you so. If you have some vegan-friendly ice cream nearby, make sure you put some on top — it’ll be the perfect mix of warmth and coolness.

Ingredients for the Base:
- 6 peeled apples
- 1/3 cup panela sugar
- 1 tbsp lemon juice
- 1 tbsp cornstarch
- 1 tsp ground cinnamon
- 1 tsp vanilla
- pinch of nutmeg
- pinch of salt
For the Crumble:
- 2 cups rolled oats
- 1/2 cup almonds
- 1/4 cup pumpkin seeds
- 1 tsp ground cinnamon
- 1/2 tsp salt
- 1/4 cup coconut sugar
- 1/4 cup maple syrup
- 1 tsp vanilla
Preparation:
- Preheat the oven to 350°F.
- Add all the dry ingredients to a large bowl and mix (chop the almonds if you don't like to have them whole).
- Add the wet ingredients into a separate bowl and mix them together.
- Pour the bowl containing the wet ingredients into the one containing the dry ingredients. Mix until everything is well combined.
- Pour the mixture into a cast-iron frying pan and spread it evenly.
- Place the cast-iron frying pan in the oven for 25-30 minutes, stirring the mixture halfway through (after 10-15 minutes).
- When done, remove from the oven and press the top with a spatula to create a level surface. (This will help the granola become “crispy” when it cools.)
- Let it cool completely (at least 45 minutes) before consuming. You can serve the dessert directly from the cast-iron frying pan.
