Vegan Apple Crumble Recipe

Ingredients for the Base:

  • 6 peeled apples
  • 1/3 cup panela sugar
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch
  • 1 tsp ground cinnamon
  • 1 tsp vanilla
  • pinch of nutmeg
  • pinch of salt

For the Crumble:

  • 2 cups rolled oats
  • 1/2 cup almonds
  • 1/4 cup pumpkin seeds
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 1/4 cup coconut sugar
  • 1/4 cup maple syrup
  • 1 tsp vanilla

Preparation:

  1. Preheat the oven to 350°F.
  2. Add all the dry ingredients to a large bowl and mix (chop the almonds if you don't like to have them whole).
  3. Add the wet ingredients into a separate bowl and mix them together.
  4. Pour the bowl containing the wet ingredients into the one containing the dry ingredients. Mix until everything is well combined.
  5. Pour the mixture into a cast-iron frying pan and spread it evenly.
  6. Place the cast-iron frying pan in the oven for 25-30 minutes, stirring the mixture halfway through (after 10-15 minutes).
  7. When done, remove from the oven and press the top with a spatula to create a level surface. (This will help the granola become “crispy” when it cools.)
  8. Let it cool completely (at least 45 minutes) before consuming. You can serve the dessert directly from the cast-iron frying pan.
