Ingredients

Serves a crowd

  • 1 tbs. bacon fat or oil
  • 1 lb. lean ground beef
  • 1/2 tsp. kosher salt, plus more to taste
  • 1/2 tsp. black pepper, plus more to taste
  • 1/2 tsp. garlic powder
  • 1/2 tsp. onion powder
  • 1/2 cup diced onion
  • 1/4 cup diced green bell pepper
  • 1/4 cup diced celery
  • 1 lb. hot sausage
  • 3 tbs. all-purpose flour
  • 1 1/4 cup whole milk
  • 3 cups pimento cheese
  • 1/4 cup grated white cheddar
  • Dash of hot sauce, plus more to taste
  • Crusty bread or chips for serving

Preparation

Heat oil or fat until shimmering in a large saucepan or over medium-high heat. Add round beef, hot sausage, salt, pepper and garlic and onion powders. Cook, stirring occasionally, for about 5 minutes or until browned. 

Add onion, bell pepper and celery and cook, stirring occasionally, for an additional 5 minutes, or until vegetables are translucent and meat is cooked entirely through. Reduce heat to low. 

Stir flour into the meat mixture, mixing well. Then add milk slowly. Increase heat to medium and stir until the mixture begins to bubble. Remove pan from heat and stir in pimento cheese and grated cheddar 1 cup at a time to ensure even melting. Season with salt, pepper and hot sauce and serve immediately with crusty bread or chips.
