Gameday Goat Cheese Guacamole Recipe
Anybody with an avocado, a lime and a fork can make guacamole, but it takes a seasoned chef to come up with this unlikely but popular combination. Chef David Bancroft's wife asks for it with double the goat cheese for an extra-creamy texture.

Ingredients
Serves 10-15
- 4 avocadoes
- Juice of 2 limes, plus more to taste
- 8 oz. goat cheese
- 1/2 cup pico de gallo
- Pinch of kosher salt, plus more to taste
- Tortilla chips, for serving
Preparation
Scoop avocado flesh into a medium bowl and mash it with a fork. Season with lime juice and salt, and then fold it into the pico de gallo and goat cheese until creamy. Serve with torilla chips.
