Hot Dog Topping Recipe: Collard Slaw
You can do more with collard greens than stew them to death. In this recipe, vibrant raw collards add texture and flavor to a classic creamy slaw.

Ingredients
Makes enough for 8-10 hot dogs.
- 1/2 lb. green cabbage, thinly sliced
- 1/2 lb. collards, washed and thinly sliced
- 3/4 tbs. salt
- 3/4 tbs. sugar
- 2 tsp. celery seed
- 3/4 cups mayonnaise
- 2 tbs. red wine vinegar
Preparation
In a large mixing bowl, combine collards, cabbage, salt and sugar. Let the mixture sit for 10 minutes, until the cabbage and collards begin to release liquid. Add celery seed, mayonnaise and red wine vinegar. Toss to combine. Chill until ready to serve.
