Ingredients

Serves 10-15

  • 1 quart cooked fresh or frozen butterbeans, liquid strained and reserved
  • 1 cup good olive oil
  • 1 tbs. tahini (optional)
  • 1 tsp. minced fresh thyme
  • 1 tbs. minced mint
  • 1 tbs. minced fresh parsley
  • 1/2 tsp. chili flakes
  • 2 tbs. lemon juice
  • Crackers, for serving

Preparation

In a food processor, mix all ingredients and puree until smooth, adding cooking liquid as needed to adjust consistency. Season with sea salt and pepper and serve at room temperature drizzled with good olive oil, toasted sesame seeds and chili flakes.
