Lulu's Last-Minute Pasta

Whip up this delicious recipe in a flash.

Ingredients:

1 lb. penne pasta
1/2 lb. ripe Brie cheese
6-8 Roma tomatoes, chopped (or 1 can chopped tomatoes, drained)
4 garlic cubes
4 basil cubes
red pepper flakes, to taste
extra-virgin olive oil, to taste

Directions:

Boil the pasta 6-8 minutes until it is al dente.

As the pasta cooks, add the Brie, tomatoes, garlic and basil together in a large bowl.

Drain the hot pasta and add it to the tomatoes and Brie mixture.

Stir the mixture until the cheese is melted.

Add the olive oil and red pepper flakes and continue to toss.

If available, garnish with fresh basil leaves.

Tips: Adding a 1/2 cup of hot chicken broth can help melt and blend cheese faster.
