Banana Bread Quinoa Cereal

Yield: 2 servings

1-1/4 cup cooked quinoa
1 ripe banana
1/4 cup pure maple syrup
1/3 dairy-free unsweetened vanilla milk
1/2 teaspoon cinnamon
1/8 teaspoon sea salt
1/3 cup raw walnuts, divided

Instructions

1. In a small pot, combine quinoa, banana, maple syrup, milk, cinnamon and sea salt, warming over low-medium heat. Stir constantly, mashing banana against sides of pot to break up large pieces.
2. Cook for 6–8 minutes, until warm and milk is absorbed.
3. Divide walnuts among bowls, sprinkling on top. Serve and enjoy.
