Muffin Tin Breakfast Pizzas = The Easy Way to Impress Your Friends at Brunch

Everyone loves pizza for breakfast, but you probably shouldn't serve party guests a cold slice from last night's delivery. Instead, use a muffin tin to make bite-sized breakfast pizzas that can be customized to guests' tastes and dietary needs.

The Ingredients
- pizza crust (enough for two 12” pizzas), store-bought or homemade
- 6 eggs
- 1/4 teaspoon salt
- freshly ground pepper to taste
- 1 and 1/2 cups cheddar cheese, or cheddar-jack blend
- 1/2 pound sausage, cooked
- 1 cup spinach, chopped
The Instructions
Grease muffin tin. Set aside. Preheat oven to 425 degrees F. Roll out dough to ¼" thickness. Cut into 12 circles with a bowl that is slightly larger than one of your muffin tin openings. Place each of the rounds into the muffin tin cavities and press into the bottom and up the sides of the cavities. Whisk the eggs, salt, and pepper in a medium bowl until fully blended.
Divide the spinach evenly over the 12 cavities. Add sausage to the top of the spinach. Fill each cavity about two thirds of the way full with egg. Top off each cavity with shredded cheese. Bake for 12-15 minutes, or until tops are lightly golden brown and egg mixture passes the clean toothpick test.
