Let Friends Customize Their Brunch With a Mix-and-Match Mini Frittata Bar

Serve up some individuality with this easy frittata idea. Provide plenty of add-ins so guests can customize their own mini frittata. This is a great clean-out-the-fridge party idea, too: Have leftover olives and feta from your last cheese plate or roasted cauliflower from last night's dinner? Add them to the toppings bar.

Ingredients:

  • 5 eggs
  • 5 egg whites
  • 1/3 cup milk
  • 1/2 teaspoon salt
  • fresh ground pepper to taste
  • add-ins: sausage, bacon, ham, tomato, spinach, onion, scallions, broccoli, shredded cheese, mushrooms

The Instructions

Grease muffin tin. Set aside. Preheat oven to 350 degrees F. Whisk eggs, egg whites, milk, salt and pepper together in a medium mixing bowl.

Prepare add-in ingredients by chopping or dicing vegetables and cooking meat in advance. Place all add-in ingredients in separate bowls, or on a cutting board.

Prepare the frittatas by filing the cavities of the muffin tin about two-thirds of the way full with egg mixture. Add in ingredients as desired. 

Bake for about 20 minutes or until the top is lightly golden brown and the center passes the clean toothpick test. Remove from the oven and cool slightly on a wire rack. The egg will have puffed up, but will will back into the cup after a minute or two. Remove the mini frittatas and serve.
