Assorted Crostini Toppings

Ingredients:

1 or 2 French baguette loaves
assorted fruits (strawberries, blackberries, blueberries, melon), sliced in small circles
cheeses (goat cheese, brie, muenster)
vegetables (cucumber, tomato)
herbs (mint, thyme, basil)
spreads (honey, fig jam)

Instructions:

1. Pre-heat oven to 350 degrees F.
2. Gather and prepare an assortment of toppings (Image 1).
3. Slice baguette bread into small pieces (Image 2).
4. Toast bread slices in the oven for 6-8 minutes until golden brown. Remove and set aside.
5. Top bread with various fruits, vegetables, herbs and spreads (Image 3-4).
6. Plate the crostini, serve and enjoy (Image 5).

Hot Roast Beef Crostini

Ingredients:

10 ounces French baguette loaves
12 ounces deli-cut roast beef
2 cups diced yellow onion
1 cup part skim shredded mozzarella cheese
1 1/4 tablespoons light butter
thyme, for garnish

Instructions:

1. Pre-heat oven to 350 degrees F.
2. Slice baguette bread into small pieces.
3. In a large skillet, saute onions in melted butter over medium heat until lightly caramelized, approximately 20 minutes. Remove from heat and allow onions to cool in skillet.
4. Toast bread slices in the oven for 6-8 minutes until golden brown. Remove and set aside.
5. Build crostini with a slice of roast beef, small spoonful of onions and a sprinkling of cheese. Return to oven at 350 degrees F for 6-8 minutes until tops have melted. Immediately plate and serve.
6. Garnish with fresh thyme, if desired.
