French Onion Dip
This classic dip will satisfy any guest.

Ingredients
2 tablespoons unsalted butter
2 medium onions or 1 large onion, sliced (about 2 cups)
1 tablespoon fresh thyme
1 teaspoon salt
1 teaspoon pepper
1/4 cup dry sherry (optional)
1 can (14 ounces) white beans
1 cup Gruyere cheese, shredded
Serves 4
Instructions
1. Preheat oven to 375 degrees F. Melt the butter in a large sauté pan. Add the onions, salt, pepper and thyme, and let cook until soft and brown (about 20-30 minutes). If using the sherry, deglaze the pan and let the liquid evaporate. If you aren't using, remove from pan.
2. In the bowl of a food processor, puree the beans until smooth. Once the onions are cool, fold them into the bean mixture.
3. Place everything in an oven-safe casserole or baking dish. Sprinkle with cheese, and bake until the cheese bubbles and browns (about 15 minutes).
