Rum, cider and fresh ginger helps chase the chill away.

Spiked Apple Cider

  • ½ gallon good-quality apple cider
  • 1 cup Laird’s applejack
  • 2 tablespoons honey
  • 1 tablespoon minced fresh ginger
  • 1 cinnamon stick
  • 6 whole allspice berries
  • 6 whole cloves
  • 2-4 tablespoons Gosling’s Rum, or to taste

Add apple cider, applejack, honey, fresh ginger, cinnamon, allspice berries and cloves to a pot or large saucepan. Cook over medium-high heat, whisking occasionally, until the liquid barely reaches a simmer.

Simmer the liquid, lowering the heat if necessary, for 5 minutes. Add rum and cook for an additional minute. Remove from heat and serve, removing spices if desired.
