Vanilla Bean Mini Donuts

These little donuts are extra light and have a double dose of vanilla flavor. They’re pretty stacked high on a cake stand or displayed individually in fancy cupcake wrappers.

Yield: 5-6 dozen mini donuts

Ingredients

For the Donut Batter:

2 cups all-purpose flour, sifted
3/4 cup granulated sugar
2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup buttermilk
1 teaspoon vanilla extract
2 eggs, lightly beaten
2 tablespoons butter, melted
Seeds from one vanilla bean

For the Vanilla Glaze:
1 cup confectioners' sugar
1 tablespoon milk
1/2 teaspoon vanilla extract
4 drops of liquid blue food coloring
White nonpareils

Directions

For the Donut Batter:

1. Preheat oven to 425 degrees F. Spray donut pan with nonstick cooking spray.

2. In large mixing bowl, sift together all-purpose flour, sugar, baking powder and salt. Add buttermilk, eggs, vanilla extract, vanilla seeds and butter and beat until just combined.

3. Spray donut cavities with cooking spray or brush with butter. Tip: Putting the donut batter into a piping bag will make it easier to fill the donut cavities without a mess (Image 1). Fill each donut cup approximately half full (Image 2).

4. Bake 5-8 minutes or until the top of the donuts spring back when touched. Let cool in pan for 4-5 minutes before removing (Image 3).

5. Finish donuts with vanilla glaze. Donuts are best served fresh.

For the Vanilla Glaze:

1. In small bowl, stir together sugar, milk and vanilla extract until sugar is completely dissolved.

2. Add food coloring and stir until color is uniform. Use immediately to glaze donuts. Sprinkle nonpareils as desired.
