How to Make a Kale-Tini Cocktail

Kale is one of the healthiest foods there is. Mix it with a little vodka, lime and agave for a tasty drink that is chock full of vitamins and minerals.

Ingredients

For two cocktails:

  • 2 cups tightly packed kale
  • 1 cup water
  • juice of two limes
  • 4 oz vodka
  • 1 tbs agave syrup

If you don't have fresh kale in your garden, use organic Tuscan kale from the market to create this bright green, festive cocktail. Tuscan kale, aka lacinato kale or dinosaur kale, is one of the most satisfying vegetable plants to grow. If you routinely harvest the lower, oldest leaves and let the tops continue to grow, you can harvest kale into January.  

Cut enough kale into pieces to fill a 2-cup measure. Cover these pieces with water and place in a food processor or blender. Puree for about three minutes.

Strain the solids out of the pureed kale with a fine sieve, pressing with a spatula to get as much juice from the leaves as possible.

Squeeze the limes and add the lime juice, vodka and agave syrup. Mix well or shake in a mason jar to combine. Pour into glasses over ice. Garnish with a small kale leaf.
