- 3 cups cooked pumpkin (roasted, peeled, drained or canned)
- 3/4 cup mascarpone
- 1/2 cup parmesan cheese, grated
- 2 tablespoons fresh sage, chopped
- 4 cups chicken stock
- 1/2 teaspoon grated nutmeg (or to taste)
- salt and pepper (to taste)
Garnishes
- croutons
- toasted pepitas
- mushrooms, thinly sliced
- parmesan cheese
- fried sage
Combine Ingredients
Add pumpkin, mascarpone, parmesan, sage and chicken stock to the blender.
