Grilled Fruit Skewers Recipe
Paired with ricotta and yogurt dips, these grilled fruit skewers will have your barbecue guests pleased at first bite.


Spicy Pineapple Mango Skewers and Cumin Lime Yogurt Dip
Ingredients
- Half of a pineapple
- 1 mango
- 1 jalapeno
- ancho chili powder (to sprinkle on fruit)
- 1 teaspoon ground cumin
- juice and zest of 1 lime
- 1/2 cup plain Greek yogurt
Watermelon and Peach Skewers and Ricotta Mint Balsamic Dip
Ingredients
- half of a small watermelon
- 2 peaches
- 2 tablespoons chopped fresh mint
- 1.5 cup ricotta cheese
- balsamic vinegar drizzle




Instructions
1: Mix ingredients to make each dipping sauce (Images 1 and 2). Cut fruit into slices at least 1 inch thick and stack, alternating ingredients on a bamboo or metal skewer (Image 3).
2: Spray with olive oil and place on grill uncovered on medium heat for 15 minutes, periodically rotating on each side (Image 4).
3: Serve on skewer with paired dipping sauce.
