Melt the chocolate in a medium bowl at 100 percent power at 30 second intervals until the chocolate can be stirred smooth (about 1 minute total).
Dip one end of a pop stick into the chocolate (Image 1) and insert into a donut hole so the straw stands upright (Image 2). Repeat with all donut holes. Allow the chocolate to set completely before proceeding.

Dip each donut hole into the chocolate and rotate until completely covered. Hold the dipped donut hole over the bowl so the excess chocolate drips back into the bowl.

Dip each donut hole into the sanding sugar and use a spoon to cover it completely (Image 1). Place on the parchment sheet to dry (Image 2). Repeat process with remaining donut holes using various metallic sugars and dragees. Allow to dry completely on the parchment paper, about 20 minutes. You may also speed setting by placing them in the refrigerator. Display your completed pops as part of your NYE spread so guests can easily grab one for a sweet snack (Image 3).
