Rotisserie Chicken for Every Day of the Week

Rotisserie chicken from the grocery store is a great option for those on the go with limited time to cook dinner but still want a hearty meal instead of fast food. If your rotisserie routine is starting to get old though, fear not. We came up with five new ways to use your bird throughout the week.
Monday: Toasted Sandwich

Carve strips of chicken and place them on one half of a baguette. Top with brie. Then, add fig jam to the other half and top with pear slices. Pop both slices into the toaster oven for 5-7 minutes and then sprinkle arugula. Assemble your sandwich, slice in half and serve.
Tuesday: Buffalo & Blue Tacos

Start with a bowl of chicken and shred the meat with two forks. Pour buffalo sauce over the shredded chicken and set aside. In another bowl, combine slaw and blue cheese crumbles. Set that bowl aside as well. Place tortillas on a baking sheet and warm them in a toaster oven for a few minutes. Remove the tortillas and add shredded chicken to each of them while still on the baking sheet. Top with slaw and serve.
Wednesday: Southwest Salad

Start with a bowl of romaine lettuce and add chicken. Complete the dish by adding black beans, corn, cherry tomatoes, avocado, Mexican cheese and top it all off with Southwestern ranch dressing.
Thursday: Chicken Tomato Stew

On medium-high heat, add tomato soup to a sauce pan. Then, add one can stewed diced tomatoes, one can of drained cannellini beans and spinach. Stir with a wooden spoon and then toss in a healthy portion of chicken. Stir again and then add ½ cup finely chopped fresh basil. Season with fresh ground pepper and salt to taste, of course. Stir and then spoon the stew into a bowl. Top with parmesan cheese and serve.
Friday: Pesto Tortellini

Add cooked tortellini to a sauce pan and toss in some sliced mushrooms. Sauté until mushrooms are cooked. Spoon in some pesto and mix the ingredients together with a wooden spoon. Complete the dish by adding grape tomatoes, chicken and more pesto because why not? Stir everything together one last time and then plate the dish. Top with parmesan cheese and you’re ready to chow down.
