Yield: 4 individual cobblers

4 cups mixed berries (strawberry and blackberries)
2 tablespoons sugar
2 tablespoons chopped mint
4 cups all-purpose baking mix
1/2 cup milk
creme fraiche or whipped topping

Instructions

1. Preheat oven to 375 degrees F. Mix chopped strawberries and whole blackberries with sugar and mint.
2. In a separate bowl, blend baking mix and milk. In a 5-inch cast iron dish, place berry mix topped with a heaping dollop of baking mixture (image 1).
3. Bake for 20-25 minutes, and top with creme fraiche or whipped topping (image 2).
