Caprese Bites Recipe
Round out an appetizer buffet with these no-cook caprese tomato bites. They're a simple, party-ready alternative to a caprese salad with the same delicious taste.
Ingredients
1 pint yellow cherry tomatoes (as small as possible)
1 pint red cherry tomatoes (as small as possible)
2 blocks fresh mozzarella, preferably mozzarella di bufala (cubed)
1 bunch fresh basil
balsamic vinegar
salt
Directions
1. On a decorative toothpick, skewer one cherry tomato, a basil leaf and a cube of mozzarella.
2. Serve with varieties of marinated olives, sliced Italian meats and breadsticks.
