Serve up a little dark enchantment this Halloween with the Haunted Forest Cocktail, a jewel-toned mix of bourbon, cranberry, blackberries, and rosemary. For the finishing touch, rosemary smoke is trapped beneath a glass cloche, allowing its woodsy aroma to infuse the surface of the cocktail. When the cloche is lifted, the smoke curls away like mist through a haunted wood.
Special Equipment
- Glass cloche with top handle
- Wand lighter or matches
Ingredients
For the Cocktail
- 6 large blackberries
- 2-3 sugar cubes
- 1 teaspoon chopped fresh rosemary
- Ice
- 2 oz. bourbon
- 3 oz. cranberry juice cocktail
- Fresh rosemary sprigs, for garnish
For Smoking the Cocktail
- Dried 3” rosemary stems
- Heat-proof work surface, such as a marble or glass cutting board
Instructions
Yields 1 serving
Muddle the Ingredients
Place three of the blackberries, sugar cubes, and the chopped rosemary in the bottom of an old-fashioned glass. Muddle until the blackberries release their juices, and the rosemary becomes fragrant.
Fill the glass with ice. Pour in the bourbon and cranberry juice. Stir to combine.
Garnish the glass with the remaining three blackberries and fresh rosemary sprigs.

Smoke the Cocktail
Place the cocktail on a heat-proof surface.

Ignite the dried rosemary stems. Allow them to burn briefly and then blow out the flame, so the rosemary is smoking. Place the smoldering rosemary beside the cocktail and immediately cover both with the cloche.

Enchant Your Guests
Let the cocktail stand under the cloche for 15-30 seconds to absorb the aroma or up to 1 minute if you prefer a deeper flavor.
