What's Better Than Sausage and Pancakes? Sausage-Filled Pancake Muffins!

These simple bites that bring together pancakes and sausage are seriously delicious. Plus, they're ready all at once versus the one-at-a-time process for skillet pancakes. 

Prep Time: 20 minutes

Cook Time: 15 minutes

Total Time: 40 minutes

Yield: 12 servings

The Ingredients

  • 1½ cups milk
  • 4 tablespoons white vinegar
  • 2 cups flour
  • 4 tablespoons sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 eggs
  • 4 tablespoon unsalted butter, melted
  • 1 teaspoon vanilla
  • 12 breakfast sausages

The Instructions

Grease muffin tin. Set aside. Preheat oven to 400 degrees F. Cook breakfast sausages and then cut each one into thirds. Set aside.

Add milk and vinegar to a small bowl. Stir and let sit for 5 minutes. Add flour, sugar, baking powder, baking soda, and salt to large bowl. Whisk to fully combine. Set aside.

Add eggs, melted butter, and vanilla to a medium bowl. Whisk to comb ine.

Stir in milk. Add wet ingredients to dry ingredients and stir just until dry ingredients are moistened.

Divide the mixture evenly over the 12 muffin tin cavities. Place three pieces of sausage in each of the cavities. Bake for 12-15 minutes or until lightly golden brown and the center passes the clean toothpick test.

Cool slightly before removing from the muffin tin. Serve warm with maple syrup.
