Cut several horizontal slices across a potato, but don't cut all the way through. Place wooden spoons on either side of the potato to prevent the knife from cutting too far. Brush the cut potato with olive oil and sprinkle with salt and pepper, then bake at 450 degrees for 50 minutes.

- cheddar cheese
- sour cream
- green onions

Stuff the slices of a sweet potato with barbecue pork and sprinkle with cheddar cheese, then bake for 10 more minutes. Finish the potato with sour cream and green onion.
Chicken Bacon Ranch
Ingredients
- cheddar cheese
- hot sauce
- bacon
- shredded chicken
- ranch dressing
- ranch seasoning
- lettuce
- crumbled bacon

Mix shredded chicken, bacon, ranch dressing, cheddar cheese and hot sauce in a bowl. Sprinkle the potato with ranch dressing mix, then stuff the chicken and cheese mixture into the slices. Bake for 10 more minutes, then top with shredded lettuce, crumbled bacon and more ranch dressing.
Cream Cheese + Lox

- chive cream cheese
- lox (smoked salmon)
- red onion
- capers
- dill
- lemon

Fill the slices of the potato with chive flavored cream cheese and bake for ten more minutes. After it comes out of the oven, top with lox (smoked salmon), chopped red onion, dill sprigs, capers and freshly squeezed lemon juice.
Jalapeño Popper

- pimento cheese


Stuff the slices of the potato with pimento cheese and top with jalapeños. Bake the potato for ten more minutes and it's ready to serve.
