Make This So-Much-Better-Than-Basic Baked Oatmeal

Forget everything you think you know about basic oatmeal. Here's how to upgrade this super-affordable, weekday breakfast staple for weekend brunch. 

The Ingredients

  • 3 cups rolled oats
  • 1 1/2 cups applesauce
  • 1 1/2 cups milk
  • 1/2 cup brown sugar
  • 1 teaspoon vanilla
  • 1 teaspoon cinnamon
  • 3 bananas
  • 3/4 cup chopped hazelnuts
  • 1/2 cup hazelnut spread

The Instructions

Grease muffin tin. Set aside. Preheat oven to 375 degrees. Place oats, applesauce, milk, brown sugar, vanilla, and cinnamon into a large bowl. Smash one of the bananas and add it to the bowl. Stir to fully combine ingredients.

Divide the mixture evenly over the 12 cavity muffin tin. Slice the remaining two bananas and divide evenly over the oatmeal mixture. Bake for 35-40 minutes or until golden brown on top. Cool for 2-3 minutes before carefully removing oatmeal muffins and placing on a wire rack over a baking sheet.

Heat hazelnut spread for 20-30 seconds in the microwave or for a few minutes in a small saucepan until pourable. Use a spoon to drizzle hazelnut.
