Easy Spring Salad Recipe
1/2 cup orange juice
1/4 cup white wine vinegar
1/4 cup olive oil
6 ounces of mixed baby lettuces
1 avocado, cut into wedges
4 ounces herbed goat cheese, crumbled
1 navel orange, sliced in rounds or segments
fresh herbs like flat-leaf parsley, cilantro and thyme
1. Pour the orange juice and white wine vinegar into a small bowl. Slowly whisk in the olive oil until emulsified. Alternately, place all ingredients in a jar, cover and shake.
2. Arrange lettuces and herbs on two salad plates. Top each with avocado, goat cheese and oranges.
3. Spoon dressing over salads. Refrigerate any leftover dressing for later use.
