Lentils (<em>Lens culinaris</em>)

Lentils are the flat oval seeds from the pods of a bushy pea-related plant and come in a range of colors, including yellow, orange, green and black. The sprouts have a nutty, peppery taste and are a great source of iron. You can use the ones sold for cooking. Harvest in 2-4 days.
