Crispy Tomato Goodness

These crispy little chips are packed with tomato flavor.

Gathering the materials

You will need: tomatoes (6 medium roma yields about 1 cup of chips) / a serrated knife / cutting board / wire rack / 2 tablespoons salt / 2 tablespoons dried basil / 1 1/2 tablespoons balsamic vinegar / dehydrator

Cut the Tomatoes

Remove the stem top of the tomatoes. Cut them in slices no thicker than 1/4 inch.

Salt the Tomatoes

Place the tomatoes on a wire rack over the sink or baking sheet and sprinkle with salt. Allow to sit for 10 minutes. Turn the tomatoes over and repeat. This will season the chips and draw out excess moisture.

Spice the Tomatoes

Blot off any excess liquid from the tomatoes and spread them out on the rack(s) of your dehydrator. Sprinkle liberally with dried basil.

Add a Little Extra Flavor

Drizzle balsamic vinegar over the tomatoes.

Dry the Tomatoes

Times may vary, but expect 6-8 hours of drying time in your dehydrator. They should be completely dry and crispy before removing. Store in an airtight container.

Enjoy!

These savory gems make a great textural addition to salads. Crumble them up as a garnish for soup or keep a few nearby for a healthy snack.
