Ingredients:

  • 1/3 stick unsalted butter
  • 2 tablespoons corn syrup
  • 1/3 cup sweetened condensed milk
  • 1/4 teaspoon vanilla
  • 4 cups confectioners’ sugar
  • 2 cups semi-sweet chocolate chips
  • 2 jars maraschino cherries

Add butter, corn syrup, condensed milk, vanilla, and confectioners’ sugar to a medium bowl. Mix to combine completely.

Flatten small pieces of dough (about 1 teaspoon) into a disk. Place a drained cherry in the center and gather the sides. Roll the dough covered cherry between your palms. Repeat for remaining cherries and place on a baking sheet. Freeze for at least one hour.

Fill ice cube trays with melted semi-sweet chocolate. Pour excess into the bowl of melted chocolate. Place the tray in the freezer for at least 15 minutes.

Add frozen cherries to the cavities. Pour melted chocolate over the cavities and shake the tray gently to release air bubbles. Freeze for at least one hour. Release the chocolates by tapping gently on the counter after allowing the chocolates to thaw for 5-10 minutes at room temperature. Use your fingertips dipped in slightly cooled melted chocolate to make a swirl on top of each chocolate for decoration.
