Spicy Maple Salmon

2 tablespoons hot or chili sauce
2 tablespoons lime juice
1 tablespoons maple syrup
1 tablespoons brown sugar
1 teaspoons finely-grated lime zest
1/2 teaspoon salt
3 pounds salmon fillet
2 green onions, thinly sliced

Yield: 15 servings


1. Preheat grill to medium-high heat. Whisk together hot sauce, lime juice, maple syrup, brown sugar, lime zest and salt. Brush over top of salmon and let stand for 20 minutes.

2. Grill, covered and without turning for 15-18 minutes or until grill-marked and fish flakes easily. Sprinkle with green onions before serving.
