Peppermint Ginger Cookie Recipe

If the holidays have gifted you with a sleigh full of candy canes, no worries. Here is an easy peppermint topped treat that's sure to please!

Yield: 12 cookies

Ingredients

  • store-bought ginger/molasses cookie dough
  • 1 cup peppermint candy, finely crushed
  • 3 cups white chocolate chips
  • 3 tablespoons vegetable oil

Bake Cookies

Keep this one easy and bake store-bought cookie dough following the package's instructions (Image 1). (We went with a ginger-molasses cookie.) Once baked, allow cookies to cool on a baking rack (Image 2).

Melt Chocolate

While the cookies cool, combine the chocolate chips (Image 1) with the vegetable oil (Image 2) in a glass or ceramic bowl, then microwave on 50 percent power in four 30-second bursts, stirring until smooth (Image 3).

Dip Cookies

Dip Cookies

Once chocolate is sufficiently melted, dip each cookie into the melted mixture half way, coating it on both sides, then quickly place on wax paper.

Top With Peppermint

While the chocolate is still warm, sprinkle crushed peppermint onto the top of each cookie (Image 1), then place in the refrigerator to cool for about 15 minutes (Image 2).
