Healthy Parmesan Pesto Chicken Wings
Serve these gourmet wings with bell pepper strips, cherry tomatoes and blue cheese dressing for dipping.
1/2 cup pesto sauce
2 tablespoons olive oil
2 tablespoons lemon juice
1 teaspoon finely grated lemon zest
4 pounds chicken wings, separated and tips removed
1/4 cup grated Parmesan cheese
pinch of hot pepper flakes (optional)
Yield: 40 pieces
1. Preheat grill on medium-high heat. In a large bowl, stir together pesto, olive oil, lemon juice and zest. Add a pinch of hot pepper flakes for a kick if desired. Toss with chicken wings until coated.
2. Grill, covered, turning as needed, for 20-25 minutes or until cooked through.
3. Arrange chicken wings on a platter, and sprinkle with Parmesan cheese. Serve with a blue cheese dipping sauce.
