Fresh Citrus and Mint Salad Recipe

Serve this light salad as a refreshing side dish to pork, chicken or lamb. The beautiful display also makes it a colorful complement to other items on a buffet.

Fresh Citrus Salad With Mint

Ingredients:
1 white or pink grapefruit
1 ruby red grapefruit
2 blood oranges
3 clementines or tangerines
1 tablespoon honey
mint leaves for garnish

Yield: Serves 8

Instructions:
1. Use a sharp paring knife to carefully remove all rind and pith from the citrus fruit. Cut citrus crosswise into thin 1/2" slices.
2. On a large serving platter, arrange citrus slices in overlapping concentric circles. Drizzle with honey.
3. Cut the mint leaves in thin ribbons, then sprinkle over the top of the salad.
