Boozy Cherry Bomb Brownies

Top brownies with vodka-infused chocolate buttercream frosting and a boozy cherry for a grown-up twist on a classic treat.

Ingredients

2 dozen mini brownies (storebought or homemade)
1 jar, boozy cherries (recipe below)
2-1/2 cups boozy cherry chocolate buttercream frosting (recipe below)

For the boozy cherries:

1 (10 ounce) jar maraschino cherries, with stems
3/4 cup vanilla vodka

For the boozy cherry chocolate buttercream frosting:

4 tablespoons butter, softened
2 cups confectioners sugar
1/3 cup cocoa
2 tablespoons whole milk
2 tablespoons plus 1 teaspoon boozy cherry vodka (reserved from boozy cherries)

Yield: 2-1/2 cups frosting, enough to top two dozen mini-brownies

Instructions

1. Make the boozy cherries by draining the liquid from the jar of maraschino cherries. Add vanilla vodka to the jar, enough to cover the cherries. Close the lid and refrigerate for one week for best flavor or until ready to use.

2. To make the boozy cherry chocolate buttercream, place butter in a bowl and beat until creamy. Add sugar and cocoa, mixing well. Add the milk and stir. Add the boozy cherry vodka liquid, mix well until spreading consistency.

3. Place the buttercream in a frosting bag fitted with a large, open star tip and pipe approximately one teaspoon of frosting onto each brownie. Tip: Cut the corner of a sandwich baggie to make a piping bag on the fly. Finally, top each brownie with a boozy cherry and enjoy responsibly. Note: Don't toss that leftover cherry vodka, use it to make our delicious Vanilla Cherry Bomb Cocktail.
