Mini Key Lime Pie Recipe
1-1/2 cups graham cracker crumbs
2 tablespoons butter, melted
2 tablespoons granulated sugar
1/2 cup fresh key lime juice
2 cups whipped topping, plus more for garnish
1 additional key lime, for zest
1 drop of green food coloring (optional)
1. Melt the butter in a small saucepan, then add the graham cracker crumbs and sugar to the melted butter. Divide this mixture among 4 ramekins or other small dishes, pressing gently along the container's side and bottom to form a crust.
2. To make the filling, combine the lime juice, whipped topping and food coloring in a small bowl.
3. Spoon the filling into the 4 ramekins, leaving a 1/4-inch border of graham cracker crust at the top of each dish.
4. Refrigerate the dessert for at least one hour to allow the filling to set. Before serving, place a dollop of whipped topping on each dessert and garnish with a thin slice of key lime or a bit of key lime zest.
