Is there a classier cocktail than an old fashioned? Tasting Room Supervisor at Four Seasons Hotel Westlake Village Kristine Bocchino offers a fruity, garden-y twist on this old standard as part of the Four Seasons Hotels and Resorts' Cocktail Quarterly campaign. The program highlights mixologist takes on cocktail trends. The Grilled Peach Old Fashioned uses locally-sourced peaches from Tim Philen's nearby Philen Pharms in California, giving this drink a natural sweetness with less added sugar.

  • 4 large, ripe peaches, blanched, peeled, halved, and pit removed
  •  ¼ cup sugar
  •  3 tablespoons amaretto liqueur

Preheat lightly oiled grill to medium-low heat.

To blanch the peaches: Bring large pot of water to a boil. Score the bottom of each peach with an X. Put peaches in boiling water for 2–3 minutes. Use a slotted spoon to remove and place in an ice water bath. Remove skin with a paring knife. Cut peaches in half and remove pits.

Place sugar in shallow bowl. Roll peaches in sugar, shaking off any excess.

Grill peaches until sugar is melted, about 3–4 minutes. Turn over and continue grilling for 3 more minutes.

Brush amaretto on peaches (peaches will flame for a few seconds).
