Although avocados are generally considered to be high in fat, the type of fat they contain is monounsaturated fat - like that found in olives and olive oil. That is the type of unsaturated fat that can actually help lower blood cholesterol.
Avocados are available year-round and are often used in salads, sandwiches and dips. Here, Chunky Avocado Salsa and Enlightened Guacamole offer the health-conscious cook lower-fat options.

Ingredients:
2 cloves garlic, minced
3 medium scallions, thinly sliced (1/2 cup)
1 jarred fire-roasted chile pepper, seeded and cut into small dice
1 ripe medium Hass avocado, diced
juice of one lime
one 14-1/2 ounce can Mexican stewed tomatoes, diced
1/2 cup frozen white corn, cooked and drained
1/4 cup chopped fresh cilantro
hot pepper sauce, to taste
Yields: 12 servings
Enlightened Guacamole
Ingredients:
3 cloves garlic, minced
1 cup pea soup (chunky or thick style soup)
1/2 cup sliced scallions
1 medium tomato, cut into large dice
1/2 medium gold bell pepper, cut into large dice
1 ripe medium Hass avocado, diced
juice of one lime
1/4 cup fresh chopped cilantro
hot pepper sauce, to taste
