Cream Wafers

Ingredients for the dough:

1 cup butter
1/3 cup whipping cream
2 cups all-purpose flour
granulated sugar

Preparation:

Mix butter, cream and flour thoroughly. Chill for one hour. Roll dough 1/8-inch thick on a floured pastry cloth. Cut with a round 1-1/2 inch cookie cutter. Transfer cuts to wax paper, which should be heavily coated with sugar. Turn each cookie to coat both sides. Place on an ungreased cookie sheet and bake in a preheated 350-degree oven for seven to nine minutes or until slightly puffy. Cool on racks.

Ingredients for the filling:

1/4 cup butter
3/4 cup powdered sugar
1/2 tsp. vanilla

Preparation:

Cream butter and then add the sugar and vanilla until well mixed. Put the filling on one flat side of cookie, and top with another flat side of a cookie.
