Ingredients:
selection of olives
finely chopped garlic
curls of lemon rind
handful of chopped parsley
olive oil, if necessary
Buy a selection of nice olives. If your grocer has an olive bar in the deli, start there. Toss in finely chopped garlic, curls of lemon rind, a handful of chopped parsley and a bit of olive oil if lubrication is necessary. Refrigerate.
The longer the olives have to sit and marinate (a couple of days), the better!
