Garlic Roast Pork

Ingredients:
pork shoulder
salt
pepper
garlic powder
fresh garlic
olive oil
Steps:
1. Create garlic rub by combining salt, pepper, garlic powder, fresh garlic and olive oil. (For best results use a garlic press to crush the fresh garlic.)
2. Using a large knife, cut several air pockets into the pork.
3. Add rub all over the pork, be sure to also rub seasoning into the air pockets. This will ensure that the flavor gets well distributed.
4. Cook in covered roaster at 425 degrees for four hours. Remove the lid for the last 15 minutes in order for the top to get crispy.
