You can tell that onions are done when they literally heave themselves out of the soil.
When harvesting your vegetables, timing is everything. For example, you want to cut your okra when it's about three to five inches long and the shell is nice and soft. Make sure you leave a little bit of stem that will encourage more okra to grow. If you wait too long, the okra becomes too big and the outside shell is very firm.

For beets, the best time to harvest is when they're about the size of a baseball. Once you've pulled them out of the ground, snip off the greens and save them because they are edible and quite tasty.

When it comes to carrots, sometimes it's a guessing game. If you can't see the orange shoulders on the top of the soil, go ahead and pull one out.

As for onions, a lot of people want to cut down the green foliage because it gets messy. Don't do that, because the foliage actually helps feed the bulb. You can tell that onions are done when they literally heave themselves out of the soil.
