Edible Weeds

Chicory

  • root is used in coffee

  • greens contain digestive properties, vitamin C and betacarotine

Dandelion

  • bitter, pungent taste

  • goes well in a salad with iceberg lettuce

  • contains iron, calcium and potassium

  • has mild diuretic effect

  • should be avoided if on medication

Watercress

  • from the cabbage family

  • peppery and tart

  • use in place of iceberg lettuce in a small salad

  • contains calcium, iron and antioxidants

  • is a digestive aid
