Rebecca Kolls visits Silvio Bernardi at Ocean Mist Farms in Castroville, California, one of the largest artichoke growers in the country, to learn how to grow and harvest artichokes.

Tips for growing artichokes:

  • Start seeds about six weeks before the last frost in your area.
  • Use little peat pots with sterilized potting soil.
  • Plant two or three seeds per container, 1/2 inch deep, and water well.
  • Fertilize (after you see greenery) with a small amount of a water-soluble fertilizer.
  • Transplant the seedlings in the ground right after your last frost date.
  • Artichokes do best in sun or part shade; the roots must be kept cool.
  • Add at least four inches of mulch when the temperature rises.
  • The artichokes should be ripe for picking 90 days after planting.
