Taste the sweet rewards of homemade herbal honey made from fresh or dried herbs such as rosemary, mint or thyme (figure A).

  • To blend your own honey, select the herb of your choice, and bruise or squeeze the foliage of the herb to release the oils (figure B).

  • Place one or two sprigs of the herb in a sterilized jar (figure C).

  • Put some honey in a saucepan and add a sprig of the herb. Heat the honey and herb for about two minutes (figure D).

  • Use tongs to pluck the herbs from the honey and add them to the jar. Pour the honey into the jar, and seal with a lid. Store the honey for about a week to allow the flavors to steep, and keep it fresh in the refrigerator. Note: For a personalized touch, place a square piece of fabric over the center lid before screwing on the outer rim.
