"[Freeze drying] produces excellent retention of flavor in soft-leafed herbs such as parsley, mint, basil and chives. Pack sprigs, whole leaves or chopped herbs into labeled plastic bags or boxes.

There is no need to defrost before use as the leaves crumble easily while still frozen; chopped herbs can be thawed quickly in a sieve before use."
